Purple Cauliflower?!*

2 Heads of Cauliflower, roughly chopped

5 cloves of garlic, sliced

1 TBS evoo

1/2 cup nonfat milk

2 TBS butter

2 TBS low fat 

salt and pepper to taste

1 C green onions or scallions as garnish

Rinse Cauliflower well, rough chop and spread on jelly roll pan (cookie sheet works too)

Sprinkle with sliced garlic and olive oil

Roast in a 400 degree Oven for 15-20 or until cauliflower and garlic begin to brown

Remove and cool

Add Cauliflower, milk, butter and cream cheese to large bowl, mash!

Season to taste with salt and pepper

Garnish with Onions

*any cauli will do, but purple is the most fun!
